🌿 Harvesting and Processing with Artisanal Care

  • Selective, Hand-Picked Harvest: The harvest is entirely manual and selective: the fruits are picked only at the right stage of ripeness (the cherry stage). This ensures uniformity and brings out the best aroma and flavor of the bean.

  • Alchemical Drying: After harvesting, the coffee cherries are washed and sorted before moving on to one of several drying methods, each developed to lend specific sensory characteristics to the coffee. This alchemical process, from cultivation to processing, awakens in the beans the memories of care and affection produced in the plant, releasing unmatched quality at the moment of roasting.

Fazenda Giori's holistic and systemic view of life extends all the way to storage. Our coffees are stored to the sound of classical and sacred music, 24 hours a day, 7 days a week. 

Music therapy is used to energize, balance and harmonize the beans, instilling in them the energy of healing, peace and connection. Coffee is a living being, and music acts as a way of communicating with the seed, easing the stress of harvesting and processing. The water contained in the seed is magnetized with this energy, restoring its balance and sense of belonging.

The quality of the coffee also lies in all the complex work that is recognized before it reaches your cup: the entire production holds organic certifications under Brazilian rules (SisOrg/MAPA “Orgânicos Brasil”), European rules (the EU organic logo, known as the “Euro-leaf”), North American rules (NOP/USDA program), IFOAM equivalence (International Federation of Organic Agriculture Movements) and biodynamic certification (Demeter seal).

The Award 2023 is an initiative of Bio Brazil Fair & NaturalTech, one of Latin America's leading trade fairs for organic and natural products. The award highlights excellence and innovation in the sector as a seal of quality and reliability, giving consumers a trusted reference when choosing organic and natural products.

 

Granted by the Conformity Assessment Bodies (OAC) accredited by Brazil's Ministry of Agriculture, Livestock and Food Supply (MAPA), this seal identifies and monitors the domestic production of organic food with regard to its origin and production process. It is awarded after compliance with the standards for on-farm production, product preparation, transport and points of sale, and must appear on product labels.

 

The leaf-shaped EU organic logo, made up of stars (the “Euro-leaf”), is granted to products certified as organic by an authorized control agency or body in accordance with European standards. It indicates that the product has met strict conditions of production, processing, transport and storage, and certifies that the product complies with the rules issued by the European Union for organic production, which are therefore valid in all member states.

 

The mark that identifies biodynamic products worldwide: Demeter-certified products are part of an international ecological network linked to Demeter International, headquartered in Germany. It is granted to products that meet the requirements of the Demeter International Biodynamic Standard, as well as other requirements established for organic products, from agricultural production through to the processing and packaging of the final product.

 

IFOAM is the worldwide organization of the organic movement, uniting more than 750 member organizations in 116 countries. IFOAM provides the market with a guarantee for organic products. The Organic Guarantee System (OGS) unites the organic world through a common system of standards, verification and market identity, and promotes equivalence among IFOAM participants (accredited certification bodies), giving consumers greater confidence in the organic “brand.”

 

Granted by the United States Department of Agriculture (USDA), this seal is awarded to products that comply with the regulations and technical standards for the entry of organic products into the United States. 


BSCA (Brazil Specialty Coffee Association) is an organization dedicated to promoting Brazil's specialty coffees, which seeks to certify high standards of quality, traceability and sustainability in production. Its certification recognizes farms that adopt good agricultural practices in the production of specialty coffees.

Fazenda Giori is BSCA-certified because it meets the requirements for good agricultural practices and goes further: it respects the environment, practices social responsibility and applies great rigor to post-harvest processing and to a 100% manual, selective harvest. It produces coffee with high sensory consistency, maintains transparent and traceable processes, adopts sustainable practices and invests in the well-being of its team, all under organic and biodynamic land management. This certification attests that the farm delivers specialty coffees that meet national and international standards.
